Ingredients To make a 100% Wholemeal loaf you will need:
Large Loaf
Water 11/8 cups Skimmed Milk Powder 2 tbsp Butter 2 tbsp Brown Sugar 21/2 tbsp Salt 11/4 tsp Vitamin C tablet crushed (optional) 1x100mg Strong Wholemeal cups 3 cups Dry Yeast 11/4 tsp Use the large wholemeal loaf setting on your breadmaker
Small Loaf
Water 7/8 cup Skimmed Milk Powder 11/2 tbsp Butter 11/2 tbsp Brown Sugar 21/2 tbsp Salt 1 tsp Vitamin C tablet crushed (optional) 1x100mg Strong Wholemeal Flour 2 cups Dry Yeast 1 tsp Use the small wholemeal loaf setting on your breadmaker
Please note: All ingredient should be room temperature otherwise the yeast will not be activated correctly.
Adding a vitamin C tablet improves the rise of the loaf. The vitamin C tablet should be crushed and added before putting the flour into the baking pan.

Instructions
Put all the ingredients into the baking pan in the order given in the ingredient list. Place the pan in the breadmaker and select the desired setting. If you are putting the loaf on timer to make overnight then make sure that the yeast doesn't come into contact with the wet ingredients. If you pile the flour on top then make a well and put the yeast in the well it should prevent the yeast from getting wet.
The 100% Wholemeal loaf is beautiful served hot or cold, and rarely lasts the day!
Glazes that can be used on yeast breads
Egg Glaze
Beat 1 large egg and 1 tablespoon of water together, brush generously (Note: apply only to doughs before baking).
Melted Butter Crust
Brush melted butter over just baked bread for a softer, tender crust.
Milk Glaze
For a softer, shiny crust, brush just baked bread with milk or cream.
Sweet Icing Glaze
Mix 1 cup sifted icing sugar with 1 to 2 tablespoons of milk to make a glaze consistency and drizzle over raisin bread or sweet breads.
Poppy/Sesame/Caraway Seed/Oatmeal
Sprinkle your choice of these seeds generously over just glazed bread.
