Vegetable Gratin Recipe

 
 


To make vegetable gratin you will need

Ingredients

3 large Onions finely chopped
4 large Carrots (1 lb) chopped
24 fl oz chicken-broth
Vegetable
3 pounds Potatoes (about 6 large)
1 pound (2 medium) swedes (rutabagas)
2 1/2 oz Minced fresh parsley
1 Nutmeg to taste
2 1/2 oz Jarlsberg cheese

Instructions

In a 5-6 quart pan cook onions and carrots in 1/2
cup of broth until softened. Add to this the parsley.

Peel and thinly slice the potatoes and swedes. Arrange half of the
potato/swede combo in the bottom of the pan sprayed with spray oil.
Top with half the onion/carrot mixture. Repeat with the other half of the
ingredients. Over the top, pour the rest of the broth.

Cover and bake for 1 1/2 hours in a 425 degree oven. Top with cheese and
sprinkle with nutmeg. Grill until cheese is browned.

This will make 10-12 servings of vegetable gratin.
