Vegetable Gratin Recipe

To make vegetable gratin you will need
Ingredients
| 3 | large | Onions finely chopped | | 4 | large | Carrots (1 lb) chopped | | 24 | fl oz | chicken-broth | | | Vegetable | | 3 | pounds | Potatoes (about 6 large) | | 1 | pound | (2 medium) swedes (rutabagas) | | 2 1/2 | oz | Minced fresh parsley | | 1 | | Nutmeg to taste | | 2 1/2 | oz | Jarlsberg cheese |
Instructions
In a 5-6 quart pan cook onions and carrots in 1/2
cup of broth until softened. Add to this the parsley.
Peel and thinly slice the potatoes and swedes. Arrange half of the
potato/swede combo in the bottom of the pan sprayed with spray oil.
Top with half the onion/carrot mixture. Repeat with the other half of the
ingredients. Over the top, pour the rest of the broth.
Cover and bake for 1 1/2 hours in a 425 degree oven. Top with cheese and
sprinkle with nutmeg. Grill until cheese is browned.
This will make 10-12 servings of vegetable gratin.
