Vegetable Cassoulet Recipe

 
 


To make vegetable cassoulet you will need

Ingredients

1 large Red cabbage; thinly sliced
2 large Heads cauliflower; cut into florets
6 1/2 oz chopped-cooked-seitan
10 1/2 oz sliced-unpeeled-apples
10 1/2 oz White beans; cooked
2 tablespoons Caraway seeds
2 1/2 oz shallots-minced
24 fl oz Vegetable stock or dark beer
1 tablespoon Pepper
1/4 teaspoons Salt
2 oz Whole wheat flour

Instructions

Preheat oven to 450 deg.

Combine all ingredietns, except flour, in a large roasting pan or
casserole dish. Sprinkle top with flour.

Place in oven and cook, uncovered, for 30 minutes.

Reduce heat to 250 deg. Cover and cook for 20 hours, stirring
occasionally. Serve hot.

This will make 8 servings of vegetable cassoulet.
