Ingredients
To make Tomato and Vegetable Soup for 4 you will need:
2 large cans of tomatoes
1 Vegetable Stock Cube
1/2 medium onion(s)
1 red onion
1 shallots
1 medium red pepper
3 medium courgette
1 leek(s)
1 clove garlic
1 pinch salt
1 pinch ground black pepper
1 tblsp italian herbs
1 bay leaf

Instructions
Chop all veg and place in a large pan.
Add the canned tomatoes and stock cube.
Then add the sliced garlic clove and all seasonings.
Bring to boil and simmer for 40 mins.
Allow to cool and blend.
You can use any leftover vegetables to make Tomato and Vegetable Soup.
Tomato and Vegetable Soup can be frozen, just split the portions into freezer bags. Use within 3 months.
