Shortbread Biscuit Recipe

Ingredients

To make Shortbread Biscuits you will need:

4oz butter
2oz caster sugar
6oz flour (sieved)
2oz ground rice

Instructions

Preheat the oven at 175C
Cream the butter and sugar together.
Gradually mix in the flour and the ground rice.
Knead the mixture into a ball.

On a floured surface roll out the dough into a round approx 1/2 inch thick.
Place on a baking sheet.
Prick the top of the shortbread with a fork (this stops it from bubbling).

Put in the oven and bake for 35-45 minutes until firm and golden brown.
Allow to cool a little then cut into triangles.
Sprinkle lightly with caster sugar.

Alternatively you can use a square tin and then cut into fingers.

Enjoy your shortbread biscuits for a nice tea time treat.
