Raisin Bran Muffins Recipe

To make raisin bran muffins you will need
Ingredients
| 12 | | Baking cups | | 10 1/2 | oz | Raisin-bran-cereal | | 4 | fl oz | Boiling water | | 3 1/4 | oz | Plain flour | | 3 1/4 | oz | Wholeweat flour | | 2 | teaspoons | Baking powder | | 1 1/2 | teaspoons | Cinnamon | | 1/4 | teaspoons | Salt | | 6 | fl oz | Milk | | 2 1/2 | oz | grated carrot | | 2 1/4 | oz | Brown sugar | | 2 | fl oz | Vegetable oil | | 1 | | Egg; beaten |
Instructions
Preheat oven to 400. Place baking cups in muffin pan; set aside. In a
small bowl, combine cereal and water; set aside. In a medium bowl, combine
flours, baking powder, cinnamon and salt. Add remaining ingredients to
cereal mixture; mix well. Add cereal mixture to flour mixture; stir just
until dry ingredients are moistened. Spoon batter into baking cups, filling
3/4 full. Bake 20-25 minutes. Serve warm.
Makes 12 Raisin Bran muffins.
