Ingredients To make pea and ham soup you will need: 1 Ib/ 500 g/ 2 cups green or yellow split peas 4 oz/ 125 g / 1/2 cup diced pieces of cooked ham 1 large onion 3 pts/ 1 1/2 litre/ 6 cups ham stock or water parsley (optional) seasoning (serves six)

Instructions
Chop the onion, over a low heat. Add the peas and water or stock. Cook gently until the peas are soft - about an hour. Puree the peas in a blender or pass through a sieve. Adjust the seasoning. Add the diced ham and serve with a sprinkling of chopped parsley on top. Lovely pea and ham soup perfect for those cold winter evenings.
