Leek Cheese Recipe

 
 


Ingredients

To make a leek cheese you will need:

3 medium leeks
1 tablespoon butter or margarine
1 tablespoon plain flour (sieved)
Half a pint of milk (semi-skimmed is fine)
6oz grated cheese (hard cheese like cheddar or red leicester)
Salt (to taste)
Fresh ground black pepper (optional)


Instructions

Bring a large pan of water to the boil and add the leeks and boil for about 10 minutes until soft.

For the sauce

First, gently melt the butter or margarine in a saucepan over a very low heat, this may take a few minutes, but don't be tempted to turn up the heat otherwise the butter will burn.

Next, add the sieved flour and mix to form a smooth paste.

Now very gradually add the milk a little at a time, mixing thoroughly after each addition to keep the sauce smooth.


After initially becoming thick, the paste will become thin and smooth as you add more milk.

Add your salt and pepper as required.


Add 5 oz of the cheese and stir until melted.

Increase the heat to medium, stirring constantly, until the sauce comes to the boil.
Allow the sauce a minute or so to thicken.

mix the leeks and cheese sauce together.
Pile into a baking dish, cover with the remaing cheese and put under the grill until the cheese is bubbling and brown.


Alternatively you can make this ahead of time, and instead of grilling you can bake in an oven (180C) for 30 mins to heat up and brown the cheese.
