Herby Pork Cutlets Recipe

To make Herby Pork Cutlets for 4 you will need
Ingredients
| 1 | | Egg | | 1 3/4 | oz | Dry bread crumbs | | 1 1/4 | oz | Fresh basil, chopped | | 2 | tablespoons | Fresh oregano, chopped | | 1 | tablespoon | Parmesan, fresh grated | | 1 | teaspoon | Fresh thyme, chopped | | 1/2 | teaspoons | Pepper | | 1/4 | teaspoons | Salt | | 1 | pound | Thin cut pork cutlets | | 2 | tablespoons | Vegetable oil |
Instructions
In a shallow dish, lightly beat the egg. In separate shallow dish, stir together
bread crumbs, basil, oregano, Parmesan, thyme, pepper and salt. Dip the pork
into the egg to coat well; press into bread crumb mixture, turning to coat all
over.
In large frying pan, heat half of the oil over medium heat; cook the pork, in
batches and adding remaining oil if necessary, turning once, for 8-10
minutes or until just a hint of pink remains inside.
Serve the herby pork cutlets with creamy mashed potatoes and steamed veg.
