Ingredients
To make Coconut Ice you will need:
280g desicated coconut
340g icing sugar
307g Tin condensed milk
Pink food colouring

Instructions
Put the coconut, the sifted icing sugar and the condensed milk in a large mixing bowl.
Mix it together using your hands.
Divide it into two. Add a few drops pink colouring to one half to give it a light pink colour..
Roll each half until it is approx. 1.5cm thick trying to make it as square as possible.
Place the white half on top of the pink half and press down firmly so they stick together.
Chill until firm then cut into squares.
Coconut ice makes a nice gift.
Place a few pieces in cellophane or tissue papaer and tie with a ribbon.
