Chicken and Sweetcorn Chowder

Ingredients To make Chicken and Sweetcorn Chowder for 2 you will need:
1 medium chicken breast (skin and boneless), trimmed of fat and diced 425ml (¾ pint) chicken stock 2 medium carrots, grated 2 medium leeks, sliced ½ medium Swede, diced 2 tablespoons dried yellow lentils, rinsed 300ml (½ pint) skimmed milk 2 tablespoons sweet corn Salt and pepper

1. Place all the ingredients except the milk and sweet corn in a large pan and bring to the boil. 2. Turn down the heat and simmer for 25-30 mins, then add the milk and sweet corn. 3. Season, warm through for a further 10 minutes on a gentle heat before serving. Lovely Chicken and Sweetcorn Chowder perfect for those cold winter evenings.
