Broccoli Soup Recipe
|
To make broccoli soupd for 4 people you will need.
Ingredients
| 1 | | Large Whole broccoli, chopped | | 1 1/2 | tablespoons | Butter | | 3 | tablespoons | Onion; finely chopped | | 2 | tablespoons | Flour | | 20 | fl oz | Milk | | 1 | teaspoon | Salt | | 3 1/4 | oz | Grated white cheddar cheese | | | 1 tbsp flour | | 1 | pinch | Cayenne pepper; to taste | | 1/8 | teaspoons | Nutmeg |
Instructions
Boil broccoli and onion for 10-15 minutes.
In a large saucepan over medium high heat, melt butter, cook 1 minute.
Add the 2 tbsp flour, whisk 1 min. Slowly whisk in milk and salt until smooth and boiling.
Add broccoli and grated cheese, continue to whisk. Bring to a boil. Season
with cayenne and nutmeg if desired.
Serve broccoli soup with fresh crusty bread.
