Blueberry Cake Recipe
|
To make blueberry coffee cake you will need
Ingredients
| 6 1/4 | oz | Plain flour | | 5 1/4 | oz | Sugar | | 2 1/2 | teaspoons | Baking powder | | 1 | teaspoon | Salt | | 2 | fl oz | Vegetable oil | | 6 | fl oz | Milk | | 1 | | Egg | | 7 3/4 | oz | Blueberries | | 1 1/2 | oz | Plain flour | | 3 1/2 | oz | Brown sugar | | 1/2 | teaspoons | Cinnamon (or more to taste) | | 2 | oz | Firm butter |
Instructions
In a medium mixing bowl, blend together flour, sugar, baking
powder, salt, oil, milk, egg and 2/3 fo the blueberries. Beat thoroughly for 30
seconds and spread in a greased round 9x1-1/2-inch pan or an 8x8x2-inch
pan. Combine flour, brown sugar, cinnamon and butter. Sprinkle over
batter and top with the remaining berries. Bake in a 375 degree oven for 25
to 30 minutes, until done.
Serve the blueberry cake warm with butter or honey.
