Beef and Vegetable Curry recipe

To make Beef and Vegetable Curry you will need
Ingredients
| 2 | teaspoons | Vegetable oil | | 4 | teaspoons | Curry powder | | 4 | teaspoons | Minced fresh ginger | | 1 | tablespoon | Minced garlic | | 1 | pound | Lean ground beef | | 1 1/2 | teaspoons | Salt | | 4 | cups | Cauliflower florets | | 3 | cups | Finely chopped zucchini | | 1 | package | Frozen peas; 10 oz | | 1 | cup | Chicken broth | | 1 | pound | Gnocchi; cooked according to | | | ; package directions | | 1/2 | cups | Chopped fresh mint |
Instructions
Heat oil in large skillet over medium-high heat. Stir in curry powder,
ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook,
stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.
Cover and cook until vegetables are tender, 10 minutes. Toss with hot
gnocchi and mint in serving bowl. Makes 6 servings.
