Basil Shrimp Stuffed Courgette Recipe

To make Basil Shrimp Stuffed Courgette for 8 you will need
Ingredients
| 4 | | Courgettes 2-3 Inches in Diameter | | 2 | tablespoons | Butter or Margarine | | 1 | tablespoon | Minced Onion | | 8 | ounces | Tomatoes; Peeled, Seeded, Chopped | | 1 | pound | Small Shrimp; Peeled and Deveined (cut shrimp if they are larger than a quarter) | | 1 | tablespoon | Fresh Minced Basil | | 1/2 | teaspoons | Salt | | 1/4 | teaspoons | Pepper | | 5 1/4 | oz | Breadcrumbs | | 2 | tablespoons | Melted Butter |
Instructions
PREPARATION:
1. Preheat your oven to 350.
2. Wash the Courgettes and trim off the ends.
3. Cut the Courgettes in half length ways and scoop out the seeds makig boat like shapes.
4. Saute the onions in butter until they are clear, add tomatoes and simmer until soft.
5. Mix the tomato and onion mixture with the shrimp, basil, salt and pepper and half of the
bread crumbs together in a bowl.
6. Fill the Courgette boats with the mixture.
7. Place boats in a greased baking dish.
8. Sprinkle with remaining breadcrumbs and drizzle with butter.
9. Bake for 15 minutes or until shrimp are pink and clear.
Serve your Basil Shrimp Stuffed Courgette.
