To make Applesauce Chocolate Carrot Cake you will need

| 4 | | Eggs | | 1 | teaspoon | Vanilla | | 1/3 | cups | Oil | | 1 | cup | Applesauce | | 2 | cups | Shredded carrots (about 3) | | 2 | cups | Flour | | 1 1/2 | cups | Sugar | | 1/4 | cups | Cocoa | | 2 | teaspoons | Baking soda | | 1 | teaspoon | Salt | | 1 | teaspoon | Cinnamon |
Instructions
The recipes I've seen use applesauce to replace most but not all of the oil
in a standard recipe. This is a flavorful and moist chocolate cake.
Mix eggs, vanilla, oil, and applesauce together until well blended. Combine
the dry ingredients and add to the egg mixture. Beat for another 2
minutes. Stir in the carrots. Pour into greased 13x9 pan. Bake at 350 for
50 minutes or until toothpick inserted in center of cake comes out clean.
