Apple and Oat Bran Muffins recipe

To make Apple and Oat Bran Muffins you will need
Ingredients
| 1 1/4 | cups | Whole Wheat Flour | | 1/3 | cups | Packed Brown Sugar | | 1/4 | teaspoons | Baking Soda | | 1/4 | teaspoons | Ground Nutmeg | | 1 | cup | Buttermilk | | 2 | tablespoons | Cooking Oil | | 1 | cup | Oat Bran | | 2 1/2 | teaspoons | Baking Powder | | 1/4 | teaspoons | Salt | | 1/4 | teaspoons | Cinnamon | | 2 | x | Egg Whites | | 3/4 | cups | Shredded, peeled Apple |
Instructions
In a med bowl stir together flour, oat bran, brown sugar, baking powder,
baking soda, salt, nutmeg, and cinnamon. Set aside.
In a small bowl combine buttermilk, egg whites, and oil, Add to dry
ingredients; stir just till moistened. Stir in shredded apple. Store
batter, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with non-stick spray coating. Spoon about 1/4
cup batter into each muffin cup. Bake in a 375 deg F oven for 18-20
minutes or till a toothpick inserted near the center comes out clean.
Makes 12 muffins.
