Almond Madeleines Recipe

To make almond madeleines you will need
Ingredients
| 2 | | Eggs; separated | | 4 3/4 | oz | Sugar | | 3 | ounces | Sweet butter | | 2 | tablespoons | Toasted almond oil | | 4 1/4 | oz | Sifted plain flour | | 1 | teaspoon | Baking powder | | 2 1/2 | oz | Toasted almonds; ground |
Instructions
Soften butter; do not let it melt. Combine with toasted oil. Butter and
flour Madeleine molds. Combine yolks and sugar, then stir in butter
mixture. Mix baking powder and flour together and stir into mixture. Beat
egg whites stiff and fold in. Add ground almonds. Place a decent spoonful
of dough in each mold, approximately half full. Bake at 400 degrees for
10-15 minutes until golden.
This will make approximately 20-24 Almond Madeleines.
