Almond and Raspberry Vinaigrette Recipe

To make almond and raspberry vinaigrette you will need
Ingredients
| 4 | fl oz | Almond or vegetable oil | | 1/4 | teaspoons | Grated lemon peel | | 3 | tablespoons | Lemon juice | | 2 | tablespoons | Ground toasted almonds * | | 2 | tablespoons | Seedless raspberry jam | | 1 | teaspoon | Dijon-style mustard | | 1/8 | teaspoons | Thyme | | | Salt and pepper; to taste |
Instructions
Combine all ingredients in a small bowl. Whisk until thoroughly mixed.
Servings: 8
* To toast almonds, spread in an ungreased baking pan. Place in 350 degree
oven and bake 5 to 10 minutes or until almonds are light brown; stir once
or twice to assure even browning. Note that almonds will continiue to brown
slightly after removing from oven.
This should make 8 servings of almond and raspberry vinaigrette.
